In order to investigate changes in catecholase activity of polyphenol oxidase during storage days, President variety of peach, and American Summer Pearmain was used in this experiment.
Materials were treated without sealing, and after sealing with polyethylene film (0.03§®) at room temperature respectively and at low temperature (5¡É).
Miller¢¥s chronometric method was used for measurement of catecholase activity. The summarized results were as follows;
1. Activities of polyphenol oxidase sealing, and after sealing with polyethylene film (0.03§®) at room temperature respectively, were not decreased until the time of decaying. But this result was differential, comparing with apples.
2. Polyphenol oxidase in peach was stable in heat, especially at 40¡É.
